Chocolate Fudge
"For me cooking is all about fresh ingredients, some quality time with myself and just enjoying the process. Chocolate is one of those ingredients which I cannot resist working with. You can simply melt the chocolate bar, add some dry fruits, set it and you are good to go. That is why Chocolate is one of my favorite ingredients to cook with. It's such an amazing (and little fancy) ingredient that helps one become a pro from an amateur cook instantly.

Well, when I think of chocolate, I think of my chocolate fudge. It is one of my absolute favorite recipes. The reason being its simple, hassle-free and my quick dessert fix.
In high school when I used to help my mum with all the cutting-chopping and was a new bee at cooking; at that time I came across this recipe, and since then it has been one of my favorite things to make.

So here I am, pouring my heart out for the love I have for my chocolate fudge.
Now, Let’s get started!

Ingredients

Ingredients:

Dark chocolate          170 grams

Condensed milk       200 ml

Pistachios                  75 grams

Almonds                    around 7-8

Butter                        2 Tsp.




Procedure:
Step 1. Cut the chocolate into small pieces. Slice the pistachios and almonds. To enhance the flavor and the texture you can even roast the almonds and Pistachios.

Step 2. In a bowl, take condensed milk and chocolate and melt them together; either in microwave or with double boiling method. For this recipe I created a double boiler by heating some water in a pan, then placed a steel ring and a bowl over it.

Step 3. Once chocolate is almost melted, add butter and whisk the mixture properly until it turns smooth.

Step 4. Then add pistachios and almonds. Mix it all together and take it off the heat.

Step 5. Put the mixture in a square tin. Make sure that it is lined with butter paper or parchment paper so that it will be easy to take the fudge out of tin.

Step 6. Put it in the fridge for about 4 hours till it sets completely.

Step 7. Once set, take the tin out of fridge, Cut the bar into small pieces and its ready to be served!






More than eating I completely adore making it. I love the process that goes into making this fudge, all the swirl and the whisking. For me the process is so magical that it effortlessly turns the chocolate bar into a luscious fudgy treat.
